I was pleasantly surprised to know "The Vedic" at The Westin Kolkata Rajarhat is focusing on such cuisines that gives an experience of Modern meets Traditional preparation like the Vedic Period using the most organically selective ingredients sourced from local farmers and also having a hydroponic garden in the restaurant itself. Vedic gives you an experience like no other as this is a must visit place at the 31st Floor of Westin Kolkata. The Vedic chants playing on loop, numerous Artworks depicting the Vedic Times, all the utensils and cutlery are also done in copper for the real treat . A completely beautiful and peacefully environment to have such a Holistic meal. The Food that is served has 3 options as the whole idea is to present a balance of the regional and seasonal fresh produce, taking us back to our roots. " Himam, Hemanta and Sishir". I was excited to get to try a little mix from of all of the three menus, so it started off with RAKHTAPHALAM a tomato broth dish with lotus steam, spinach coriander pesto, curry leaves and coconut foam on the top. Moved to KAMAL KAKRI, ORGANIC MOONG BHALLE, NAMKEEN GULAB JAMUN KI CHAAT, all tasted fantastic and was beauty for the eyes too, appreciate the Chef's efforts. From the Mains the dishes that came on the plate was WINTER GREENS SAAG, METHI THEPLA, DAAL VEDIC, BLACK RICE, DUM KA AANJEER KOFTA and ending dessert was GAJAR KA HALWA. Overall the time spent here was absolutely peacefully and a calming state of mind
