The Prelude:
============================================
Recall the red Jamaican-accented crab Sebastian from Walt Disneyâs 1989 animated film âThe Little Mermaidâ? Celebrity Chef Kelvin Cheung was probably inspired by it when he opened doors of Bastian on May 29th, 2016. Located at the curb of Burger King on the yuppie Linking Road opposite National College, this is a true-blue sea-food joint boasting of a fare which would put many Tom, Dick or Mahesh to shame. The place is now frequented by Bollywood celebrities and Joshua our manager informed that Tiger Shroff is a regular here every Sunday.
The Picture:
============================================
Despite the premiumness, the ambience is not overly daunting. The place has been designed in the form of a hull. There are dim, yellow lights and there is also a display of vintage wines. Portholes. I was also glad to see Hikvision cameras securing the entire place :)
The Process:
============================================
There is an extreme emphasis on quality and personal hygiene. âWe donât freeze, we just ice-bath. There is an everyday ordering system. We source our meat from only the premium vendors. We have an altogether separate bakery kitchen. All our bread, pastries and cheesecakes are made inhouse. Our ice-creams are also our brand.â
âWe clean our kitchen thrice a day. We have seven to eight freezers for stocking different food items. The place is closed on Mondays in the afternoon as we devote that time specifically for deep cleaning.â
The Personality:
============================================
Chef Kelvin has bid adieu to India and his erstwhile colleague, Chef Boo Kim has stepped in his shoes at this place. And he is ably helped by Chef Amol Phute who has some marquee names like The Orcid, Mumbai, The Harbour Bridge Marriott, Florida and Fermont, Dubai, behind him. The place is now owned by partners Raj Kundra and Ranjit Bindra.
The Platter:
============================================
SALMON JALAPENO (3.5/5):
Be warned that this is a cold dish but the chefâs favourite. Filet of the freshest of Salmons garnished with onions, crispy garlic, bits of cucumber and jalapeno served on a bed of Ponzu sauce. Citrusy, soft, and goodness of Norwegian salmon.
LOBSTER THERMIDOR (5/5):
This was a rocker of a dish. Giant lobsters. Served cracked open. A filling of the freshest of meat. Cooked with madras curry, coconut powder and parmesan cheese. The best of the best.
ANIMAL PRAWNS (4.5/5):
This is the same animal sauce which has been made famous by In-N-Out burger in the US. The largest of prawns cooked with this animal sauce, containing house-made pickle, Sriracha sauce and egg yolk and garnished with candied nuts â almonds and cashews. Gobs delightful enough to make anyone crazy.
STEAMED SCAMPI (4.5/5):
For the uninitiated, Scampi is again from the lobster family from faraway Norway. Our fare was cooked with soy, garlic, ginger, and chilli. This was a dish where you threw etiquette to the winds, ventured to pick up the delicacy in both hands, peeled open the shell, scooped the meat with your fingers, and dunked it in your mouth. Cocking a snook at the naysayers nearby.
CRAB IN SZECHUAN SAMBAL SAUCE (5/5):
This was again a ten on ten dish, and it was an even match between this and the earlier Lobster thermidor. Cooked with schezwan Sambal sauce with fermented chillies, onion, garlic, jalapeno, and housemade spices, this was a perfect accompaniment to the burnt garlic fried rice.
BURNT GARLIC VEG FRIED RICE (5/5):
The crab and this went hand in hand. Jasmine rice cooked with zucchini, carrot bits, garlic, scallion. The combination was so heavenly, this could become a complete meal in itself.
The Pleasure:
============================================
SMORES CHEESECAKE (4/5):
Melted marshmallows flambeed on a layer of dark chocolate. Cream cheese beneath it with a base of crushed graham cracker biscuit. Sea salt on the dark chocolate. Cute as they come, the daughter seemed to relish it.
ROCKY ROAD ICE CREAM (4.5/5):
Unlike the stereotypical chocolate ice-cream dunked with chocolate sauce and sprinkled with nuts, this Rocky Road came across as an unusual fare of light ice-cream (made inhouse at that) loaded with endless goodies - peanuts, almonds, cashews and pistachio.
SPECIAL MOCKTAILS (4/5): The bartender also chose to regale us with out of the menu delights - the first one had fizzy pineapple and orange juice topped with honey, lime juice, falernum liqueur, the other one had blueberry jam, watermelon juice, lime juice, falernum syrup and soda. Both went extremely well with the meaty delights.
The Postlude:
