The food there was amazing . I am really missing the fragrant chicken pulao . It’s brilliant . Order takes time because the biryani takes time to prepare . So plan accordingly . And they won’t take pre orders on the phone. The setup of the place is prefer for a family meal or a date too

I want to start with the amazing interiors and staff of this restaurant. We went for a lunch on a weekday so the place was relatively empty. The ambiance and decor was great, something you would expect from 5 star restaurant. The staff was really courteous and helped us optimise our order. Now coming to food, we went with the specialities of this place starting with Kakori kebab then moving to mutton biryani and finally having gulab ki kheer. It was meal sufficient for two adults. The kebabs were really well cooked and served along side a small bread of sheer maal. The spices really stood out in each bite of the kebab. Personally for me the garam masala was on the higher side but was still good enough for me. Next we had mutton biryani which was again really good. The aroma of saffron was very prominent in each bite and the meat fell of the bones very nicely. The raita alongside biryani was another winner. Again I would have preferred a little less saffron but it was good nonetheless. Finally based on the recommendation from the staff, we had gulab ki kheer which was great. The aroma was great and you could taste the dried rose petals in the kheer which was a unique experience for me. Obviously the price is on the higher side since it's in a five star property but the place is meant for special occasions. Worth a visit.

Beautiful ambience and delicious food!
Kakori kebabs literally melt in your mouth. Undoubtedly the best kebabs I’ve ever had. They are a must try.
Loved the Biryani, it isn’t your typical oily masaledaar Biryani.
Dessert portion was kinda tiny, but delicious.

Dum Pukht Kakori Is out of this world. A delicate melt in mouth kabab of finely minced lamb.
Shahi Nehari - The lamb was super soft (cooked overnight with aromatic potli masala then assimilate with the extract of basmati in milk and almond paste).
Dum Pukht biryani - Basmati rice simmered with lamb in mace ittar and kewra. You should try this if you happen to visit this place.
Now coming to desserts. Yes, Zauk E Shahi wins the race against Kulfi. Kulfi was delicious too but Zauk E Shahi (made of khoya dumplings with saffron flavoured reduced milk) was amazing.
All in all a good Experience!

I had visited the restaurant for a dinner with my wife after booking a table under the Dineout Gourmetlicious festival.

A non-vegetarian meal for 2 comprised of the following:-

Starters : Dum Pukth Kakori and Seekh Gilafi Dumpukth

Main Course : Murgh Handi Qorma, Shahi Nehari and Maash Qaliya, followed by Dum Pukth Biryani with Raita (and, Chicken Pulao - we had requested for a chicken dish as my wife does not eat mutton)
Dessert : Kulfi Badshah Pasand and Zauk-e-Shahi

The ambience is fabulous - styled in, what I am assuming, the fashion of the Lucknowi Imam's Darbars.

The service is impeccable- the service personnel were very courteous, prompt with their advice( always spot-on with it) as responsible as the Chef and their staff in elevating the entire experience of the evening.

Each of the aforementioned dishes were of generous proportions - both of us received one serving of each item.

The food preparation(s) were on a different level - especially, the Murgh Handi Qorma and the Maash Qaliya (dal). Both, my wife and I, concurred that the dal was one of the best we every had.

All-in-all, an amazing experience and I would, most definitely, be visiting the restaurant again.

Mesmerizing with the moment you step into the restaurant. Nawab looks made more authentic with pigeons statues on all tables. Ambience was something you can look forward too... but most of all the food is worth everything.
The seekh gilafi dum pukht and the kakori kebabs were mouth melting good. The shorba had only 1 nonveg option but was served at the correct temperature and taste was again something you look forward too.. the murgh pasand chicken gravy and the mutton biryani and the dum chicken biryani was like to the perfect. The chef has done a great job. And for dessert from shahi tukda to zauk e shahi to the kesari phirni it was all worth ending the meal with.
Special mention of vaibhav who soo attentive at the table and anticipation of needs. Made extra efforts to fix up the mocktail that i desired and wasn’t part of their menu. Also Nikhil who was ever ready with suggestions.
Last but not the least the only thing they need to work is on their mocktail menu which has only 4 options and on the shorba menu which had 2 veg n 1 nveg option.

This restaurant comes in the list of top 10 Indian restaurants, so had to try. Housed on the ground floor of ITC Grand Maratha, ambience is perfect with awadhi/ lucknowi theme. Being a vegetarian my choices were limited but still no regrets. The food quality as well as the taste both were good. The staff is very polite. Service was excellent and so was the silverware and table arrangement. Overall a nice place only thing is it would be great to have more options for vegetarians.

When it comes to the word Peshawari or the indian masala meal, what other than Dum Phukt...The best cuisine served in an ambeince of the royal era.

Had the mutton Galouti kebabs which was cooked exactly as it is suppose to be. Tender, creamy and the melt in the mouth delicacy, just perfect. Have tried the dudhiya kebab and the prawns.

A birthplace for the several delicacies like Lucknawi favourful lamb Biryani , juiciest kebabs and finally the paan to complete the treat.

A must try @ITC Maratha.

Located in ITC Maratha, Dum Pukht is known for the best Awadhi food one can get in Mumbai. This cuisine's legacy is almost 200 years old when it was developed by the ‘bawarchis’ of the Lucknow Nawabs. They created the dum-style of cooking which is a process of cooking over a slow fire to allow the ingredients to release their flavours and aromas. The clay-pot (handi) in which the food is cooked is typically sealed with dough for two reasons, to ensure that the food is ‘dum’ and the bread also gets the flavours infused. Overall the Dum Pukht style of cooking imbues the food with a lot of richness of flavors that distinguishes it from other style.

🍽️ Food –
🍴Started off with the starters of Dudiya Kabab which was scrumptious. The cottage cheese kababs were succulent and tasted even better when you had them with the meethi roti (sort of like a puranpoli). A must must order!

🍴The Kham Khatai was a completely different experience and while it was made well, I didn’t enjoy it as much as the Dudiya Kababs. This was made from green moong and was topped off with elaichi (cardamom) and kesar (saffron).

🍴Moving onto the main course, the vegetarian options like in any other Awadhi restaurant are limited. We ordered Dal Makhani, Qasr-e-Pukhtan (Paneer in red gravy) and a variety of Roti’s including Khamiri and Roomali roti. Along with this we had the Subz Biryani which was a typical Lucknowi biryani served with Raita. The main course was also delectable and none of us had any qualms.

🍧 For dessert, we ordered the Kulfi Badshah Pasand which was lovely. However the menu mentioned that it is served ‘crowned’ with a gold leaf which it wasn’t so not sure what was amiss.

💡🎶 Ambience –
The ambience of Dum Pukht is regal and exquisite and reminds you that it’s trying to re-create the by-gone legacy of the majestic Nawabs. The tables are set perfectly with silver plates and glass chalets giving it a very artful setting. The red and green chalets convey to the servers whether the person is a vegetarian or not which I think is a very smart move.

👨‍💼 Service –
The only qualm I had with the experience was the slow speed. And I know that this style of cooking is slow, but it wasn’t limited to the dishes which genuinely take time. The Kulfi took almost 20 mins to arrive and the presentation of that was also pretty dull. Even the bill took a lot of time to arrive which meant that after a point of time everyone started to get annoyed.
While the staff was very pleasant and helpful, they really need to up their speed because on crowded days I assume it would be even more difficult to manage the tables and the preparations.

A Rendezvous with Royalty!

The grandeur of sophisticated architecture coupled with the striking decor of the restaurant immediately transported us to the ‘darbaars’ of Awadhi royalty! Giant silver plates with cloches were placed in front of us and the delicious aroma of what lay underneath the cloche swept through the entire table. The extravagant ingredients, the detailed processing and the magnificent presentation made it not just a meal, but a larger-than -life experience and this place qualifies as one of my favourite dining places!
The interiors made ourselves comfortable around the ornately decorated table.
Dum Pukht is one of my favourite restaurants!
Coming to the food...
The delicately spiced, melt-in -your-mouth (literally) Kakori kebab, grilled to perfection, it made my tastebuds swoon in delight!
The Murgh Khushk Parda was surely a shaahi preparation. Marinated chicken pieces grilled in a tandoor and then finished off with bell peppers, onions and chunks of pineapples on a dum hid below a purdah or curtain of flaky puff pastry.
The desserts are drool worthy and have a fantastic blend of flavours that can be savoured in every bite!
The maximum brunch on Sundays at the Peshwa Pavillion lets you order any dish from any if their 5 restaurants!

Another Great Restaurant @ ITC Maratha, uniquely different from other Fine Indian Restaurants in offering great Lucknowi Cuisine.

*Veg only Review*
This restaurant is special for its Kebabs and Biryani. There are very limited choices of both, but more variety does not mean better. Despite a selective menu, the veg kebabs are great and unlike the ones you find at other restaurants.

We are a couple and had the Dudhiya Kebab & Hara Bhara Awadhi for Starters. For mains, we had the Veg Biryani. This menu was suggested by our Server (great service), and was perfect in variety and quantity, as the food here tends to be really filling.

There was distinctness in flavour and texture, and the kebabs were very well cooked. These kebabs are not like your regular BBQ ones but they are pan-fried or various techiques maybe. That said our kebab came with bread and its a great combination. The Veg. Biryani was very nice and fresh, optimal temperature and well steamed. The traditional cooking style did give it a nice taste. Maybe the only suggestion for the Biryani would be that it was much less spicy and little less flavoursome, but that depends on one's palate.

Overall, it was a great experience and reccommended. We really look forward to visit again, especially for the kebabs.

Pros
+ Great Kebabs
+ Great Service
+ Unique Indian Cuisine Offering

Cons
(-) None Specifically
(-) Maybe increase Choices for Veg Biryani to suit various Palates

Tried their kakori kebab, the flavour of cloves was so overpowering my mouth went numb and had to take a healthy swig of my wine to clear away the unpleasant taste, the sheermal does somewhat balance out the strong spice but it is too tiny to be adequate... but the lamb biryani changed my mood completely.... It reminded me of the delicious old school biryanis I have tasted in Lucknow and went one better. The spices were delicate and well balanced and the flavour of pure ghee was magic. The meat was so soft that despite being on the bone I could cut it with a spoon. The liquor variety was good & not overpriced, best of all.... they have wines by the glass. So just for the biryani, liquor and ambience I would give them full marks...took away I mark for the kebab.

The kakori kabaab just melts in the mouth. Also Jhinga Dum Nisha was awesome- the prawns were perfectly done, fresh and perfect.

The dum pukth lamb biryani is a signature dish. The lamb is perfectly marinated and dish is low on spice, steaming hot, perfectly retained moisture in lamb/ steamed rice.

The dinner here is a marvel. Top it with great ambience and hospitality.

Dont miss the Sahi Tukda for desert even if you are full.

I was enamored with all the royal treat at the recent Iftaar experience at Dumpukht.

The opulent decor to sumptuous food to the flawless service that makes you feel no less than a king or queen.

A special festival Ruhaniyat at Dum Pukht is a glorious feast showcasing the Khwaan Thaal; thaal filled with Ramadan delicacies and abundance of traditonal flavors.
From succulent Kebabs to incredibly delicious haleem, nihari and biryani, you name it and they have it.

Larger than life, this Khwaan Thaal was a gastronomic delight!

I'll remember this meal for a very long time!

Would definitely recommend to visit and experience this before 14th June.

Dum Phukht is a great place to be at. Maybe a better place than its exalted cousin Peshawari (which i think is a bit noisy and congested). The decor is a good blend of the contemporary and the artistic. The spaced out seating and the friendly staff is what relaxes you the most. This time there was the Ramadan festival food on offer as a fixed menu complete with the dates, haleem, kebabs, sevaiya and the rasmalai. The presentation in a huge dining silver set was very interesting and lavish. The food quite nice and each dish was with its exquisite and unique flavor. Surprisingly a restaurant like dum phukth which is so famous for its Awadhi cuisine falls short at the Galauti kebabs which were not so soft as what you would expect. Great place to be in at point in the year and which would for sure never disappoint.

While have been to this Hotel quiet a few times never had a chance to have dinner at this place. So decided to have dinner here with family. Had reserved a table so after being seated , dived into the menu.

The wine collection is good here and if you love wines [which I do] then you have a treat. Wend for the red and ordered starters to go with, The starters were very good , cooked to the right level without loosing the texture of the dish.

For the main corse ordered assorted breads, with a veg & a non veg main course. The breads were very well done and had a taste of their own. The main course did not live up to my taste as it was more 'satvik' in taste.

Had a soft gulab jamun in honey which was good for the sweet tooth.

The service was very good but I found the decor to be a little dated [including the menu cards] which were worn out. I expect these small things to be exquisite and neat when you are at such a fine dining place.

Also, was almost half empty for a Sat evening , so that did not give a good feeling while dining . I like the place I dine to be full with guests this helps liven up the place.

I give it a 4/5 little more due to the ITC pedigree else it would be a 3.5.

After eating a peshawri a day before where I was not satisfied with the cooking, I was pleasantly surprised and satisfied with the way the staff at ITC took my feedback.

Based on that, I decided to give the renowned Dum Pukht a try and I must say the turnaround was brilliant to say the least. Every bite from the starter to the paan was filled with flavour. The texture and taste of every dish was different and that's what made me enjoy every bite.

I went for a chefs fixed meal rather than individually ordering anything as gives me a bit of everything

In the starters, I had a seekh gufani, kakori kebab and a prawn starter. each of them were unique and flavorful in their own way. The kakori kebab which is a signature dish truly melts in the mouth and I could actually eat a lot more then had the thought of the other items also.

In main course I was served lamb nihari and something similar to dal makhani but made with green lentils. after seeing that dal I was convinced it is dal makhani but the flavour of the same was so different and I couldn't believe how a dish so similar in texture to dal makhani could taste so different

A biryani was also served with a garlic flavoured raita and the raita was exceptional

For desert a gulab kheer was presented which was as different as possible from a conventional kheer, I was literally licking the spoon

The chef and the senior staff came to take my feedback and I must say I will go here again and probably eat everything again that I had today

This restaurant is by far one of the best restaurants I have visited in India. The food stands up to its reputation and the high price is compensated with finger-licking delicacies of fine Biryani and melt-in-mouth kebabs.

We ordered the 2 non-veg Biryanis (one was Murg Yakhani Pulao though) on the menu and a kebab. This was shared by 3 people and the quantity was extremely good (kebabs are heavy nonetheless) for a pice of about 6,800 Rs.

The beauty of this restaurant lies in its dum cooking and the legacy of the Qureshi family who have cooked for generations for the Awadh royal family.

What disappointed me the most is an unpleasant odour when we entered the restaurant and depressing lighting. The interiors are of traditional Awadh style but the lighting did not do justice to the same.

The service was really good and the waiter at our table (I forgot the name but he said he was from Bhopal) was extremely hospitable. It was reflective in the genuine service that he put up for us.

Over all, full marks to food and service but they really need to work on interiors and proper ambience in general. (You can see my love for the food that I didn’t even care for a good picture because I wanted to munch in faster)

ITC most certainly knows it's Dal game. And this is coming from someone who has never had much appreciation for dal 😃 they have a dish of cheese stuffed morrels; I can't quite recall the name but its heavenly! And their tikkas are on point; something totally expected out of ITC. What I really like about this restaurant is the smells of cardamon and saffron hues. I used to belong to the school thought of North Indians who believed Mumbai can't cook Mughlai and Lakhnawai cuisine and there it is, ITC in all its glory. I am happy this exists.

This place is a complete gastronomic delight.
The ambience is soothing and peaceful. You forget about the ambience once the food arrives.

The service was great and Rohit made sure that we were comfortable and well attended to.

What we ate?
Dudhiya Kebab: soft paneer layered with some stuffing - perfect if you at a vegetarian
Kakori Kebab: one of the better
kakori kebabs I have had. Must order if you eat here.
Chandi Kebab: chicken marinated in a creamy
Sauce, I found this once strictly ok , can be given a miss
Warkhi Paratha : not if you are looking for health bread, this is multi layered paratha almost like soft puff pastry, coated with ajwain. Must try
Chicken Gravy - don't remember the name, recommended by Rohit, nice light gravy
Betki Fish in mustard Sauce: if you love fish this one is for you
Lamb biryani: the meat an rice just melts in your mouth, if you are low on appetite skip everything else and just order their biryani.
GulabJamun and phirni skip if you are already full.

Overall this place will leave you delighted.
Bon appetite!

I have died and gone to food heaven!!
Went here for a family dinner and loved every minute of it. The best part is the courteous and super child friendly staff.
Most fine dinning restaurants do not allow toddlers, however Dum Pukht was more than accomodating.
I think my child enjoyed the most since he recieved several chocolates from the wonderful manager.
Coming to the food, my husband is from lucknow and he is very particular about the biryani.
They have a limited menu and thats the best part, because everything is so flavourful.
We are big fans of Idris ki biryani and the biryani at Dum pukht is a much better version of that.
The meat was melting in the mouth and the fragrant rice were bang on.
For the starter we ordered the shorba shahi pasand and the murgh chandi tikka. The chicken was really soft and with the right amount of spices. The soup had an amazing saffron flavour and a beautiful blend of spices.
To finish off we ordered the gulab jamuns and shahi tukda. Both were bang on in sweetness and texture.
Would definetely visit again.

I commence my culinary sojourn from the much acclaimed restaurant - "Dum Pukht" by ITC Maratha, Mumbai.

Touted by many as one of the best Indian restaurants in the city. Dum Pukht specialises in reinventing age old Lucknowni and North Indian recipes into new and modern dishes but yet manage encapsulates the regality and simplicity of Traditional Indian cooking.

One cannot help but marvel at the tastefully done up décor which very accurately portrays the Indian architecture in all its splendor and enigma. The chairs could easily be passed of as thrones fit for kings! Amazing eye for detail all-around.

Beverages -
The "HANDMADE ORGANGE JUICE" was lovely. Freshly squeezed, right amount of pulp, adequately sweet. Off to a great start! The "VIRGIN MOJITO" was amazing! Such an easy recipe yet so difficult to execute. Correct amount of sweetness, right amount of fizz and most importantly, the distinct taste of the mint really stands out. Super refreshing!

Appetizers and Mains -
"MURGH CHANDI TIKKA", a staple in Indian cuisine did not fail to live up to it's expectations. The meat itself was moist and succulent. But what I was most impressed by was the marination of the chicken itself. Brimming with flavour it was hard to settle with just one piece. Although the silver leaf didn't enhance the taste, it was visually appealing and I didn't mind it being there.

"GILAFI SEEKH KEBAB", a Dum Pukht speciality, was my favorite appetizer of the night. Melt-in-mouth meat coupled with an explosion of flavours is one deadly combination. A MUST HAVE at this restaurant.

The "MAHI DARIYA" completed my trio of appetizers. The batter was crispy and delicious. The fish was cooked to perfection. The hint of cumin seeds were a nice touch to the dish.

The "WARQI PARATHA" was something which piqued my curiosity so I decided to order it. It was unbelievably fluffy and much to my surprise oil-free. "The KOH-E-AWADH", succulent braised lamb shanks curry complimented the Warqi Paranthas very well.

Mains -
Okay. As a hardcore carnivore it is hard to admit that the best dish of the night was hands down the "DAL DUM PUKHT". The richness of the Dal was downright ridiculous (in a good..no VERY GOOD way). The unbelievable flavour profile of this dish was so spot on that I didn't seem to mind the calories and kept going for more. You cannot come to Dum Pukht and not have the Dal Dum Pukht. An unforgivable sin. I paired this up with flaky "GARLIC BUTTER NAANS" which were expertly made and again, laden with butter (not that I mind)

By the time I arrived at my AWADHI GOSHT BIRYANI, I was ready to slip into my jammies and take a comfortable spot on the sofa, dreaming about the feast that I just indulged in. But the waiter insisted I give it a try and boy was I glad! Best biryani I've ever had in my life. Most establishments make the cardinal sin of adding too much masala in the biryani, in hopes of enhancing the flavour. But it was very evident that the chefs were expertly trained and their technique showed through and through. Brilliant stuff!

Dessert -
If you ever need a problem, it's how to have dessert on a full stomach. The HOMEMADE KULFI WITH FALOODA was delightful. Very light and not overly sweet. All gobbled up!

And so, my meal ended on a high note as I proceeded to my home to continue my dream about this feast I devoured.

Food fit for a king? YOU BETCHA'

Also, I would like to mention that the service was excellent! In my opinion, full value for money.

Bon Appetit!

Experience Four
Must commend Chef Asif for the excellent dishes
Recommend the Dal Dum Pukht
The veg Biyani .. so so aromatic and so so delicious
Their Dahi kebabs
Their warqi paratha
In the desert tried their Shahi Tukda and it melted in the mouth
Also wish to commend Nikhil Vaibhav and Abhishek for their attention and courteous service
At the end you are served Meetha paans, which are just the right way to end a delicious meal

Experience Three
Loved the Gobi mussalam
The mutton biryani and the raita accompaniment
Great ambience great staff

Experience Two
Mind blowing
I had awesome food great courteous service
Try their Labgeer kebab
Just melts in the mouth
And can you imagine a beetroot based ShikhamPuri that's awesome to taste
Recommend the murgh Chandi tikka
But their mutton kakori was just too soft .. melts in the plate itself ! You cut it and it disintegrates on the plate itself but well son loved it
Starters are served with a Shermal a sweet bread on the house and dahi kebab
Recommend their Dal Dumpukht and the Shahi Nihari
Haven't enjoyed mutton as much as I did this visit
Loved the warqi paratha but found the murgh yakhini pulao a little bland. Next day the same pulao became flavorful !
For desserts try the shahi Tukda again a melting in the mouth version and their jaggery flavoured Rabdi with Gulaab jamuns called Zauk E Shahi but as for me I shall try their kulfi next time!
Full marks to the starters and main course
full Marks for the ambience and the great staff..
The decor is pleasing to the eye
Have tried adding photos that showcase the ceiling and jaaliwork
definitely worth another visit

Probably the best Dum Biryani available in Mumbai. If you are a lover of spicy Hydrerabadi style Biryani, you will be disappointed. Personally I like the mildly spiced, aromatic Lucknowi style Biryani. Having tasted the best Biryanis of Lucknow, I can vouch for the authenticity of their taste. The rice with subtle, infused taste of the lamb, and spices trapped by the sealed handi makes rice the star as it should be. Most resturants miss the point and focus on the spices.
Another favourite is the Kakori Kebab. It is an amazing, tender, finely minced, almost pasty lamb kebab. It actually melts in your mouth. It is an acquired taste and not all may like it the first time they try it. Once you get it, you will be a fan for life.
Ambiance is ok but this iconic resturant needs a look that compliments its legendary status. Its a bit too closed for my liking.

Had a dinner at Dum Pukht other day and struck off one more place from bucket list. Dum Pukht regularly appears in many different top 10 Indian restaurants list. Housed @ ground floor of ITC Maratha (along with another famous restaraurent – “Peshawari”).
Ambience is perfect with a “Awadhi/Lukhnawi “theme. Being vegetarian, my choices were limited but surely no regrets. I started with a lentil soup and there is only one way you can describe it “delicious”. For main course- I decide to try Veg Biryani served with Raita. I was trying Biryani after a gap of 7 long years (gave up eating rice for religious reason for 7 years) so was eager to start my tryst with rice based dishes at one of the best restaurants in the country – know for Biryani. I must say that I was bit disappointed as the biryani was bit more spicy then I expected. That bit of extra spice ruined the natural flavour & aroma of this fame dish. May be it tasted that way for me as I was rediscovering the aroma & taste of biryani after a gap of many many years. . I didn’t try any dessert so no more to add on food experience.
Service was excellent and so was silverware and table arrangement. I am sure this restaurant has more to offer and I am going to try in my next visit. For now – I have to settle for 4.0 stars…

OMG! What an amazing place to be! When we entered the restaurant, we were greeted with utmost respect and love which really made us feel very special, in fact I thought that this man at the counter was personally waiting to greet me, I was overwhelmed, the interiors are rich and they depict our nawabi culture, you feel like you are in some palace of Lucknow, we were directed to a table placed right in between the restaurant, I loved the cutlery, the glassware was rich and rare, before ordering our food the steward placed some papadums with three different types of chutneys, one was garlic based but my favorite was the mint chutney mixed with hung curd, it was light on my pallet and tasty, then we ordered for Gosht Kakori Kebab and it was to die for, it just melted in my mouth, had a very nice aroma and it was the best one I have ever tried in my life, then we had ordered for chandi kofta along with some kashmiri roti, each bite of kofta gravy tasted different, the kofta was soft fluffy, the roti what was served to me I swear I could just eat the roti without any gravy it was really very well defined by its flavours and texture, we ordered for mutton biryani along with mirch ka salan, I was really lost and engrossed with eating and relishing every bite of biryani it had a very unique fragrance in the rice but somehow my friends didn't prefer it, they felt it was too dry to be consumed, and finally comes my favorite course of the meal, kuch meetha sheetha, the only thing where I felt dissatisfied and disappointed, I think they could do a lot better in it. Overall it was brilliant, it was value for money, and yes how can I forget, a special thanks to the service staff, they were too good with their work, they made us feel very comfortable and special. This place is in my repeat list for today.

Dum Pukht serves Devine Mutton/lamb Shahi Nihari. It indeed is one of the most refine Awadhi Restaurant in town. After Sahib Room at St. Regis (once my favourite) served Metal piece in my food,i had lost all hopes from fine dining joints. But Dum Pukht revived my faith in Awadhi food being served with utmost care.

Vegetarian curry and Maash Ki Dal were astoundingly good with melt in the mouth breads to compliment it.

Biryani ordered by us Veg and lamb were unfortunately extremely mediocre though finest ingredients were utilised yet lacked taste,it just had fragrance.

Service Staff for a restaurant where 4 dishes cost you Rs.11000 could be better and need polished training. Even if it didn't cost what it did, service staff of a restaurant play an integral part in completing an over all experience. Don't ever take your guest for granted as we spend our hard earned money for a very simple expectation which is good experience.

I finally went to dum pukht last night!!! It had been on my wishlist for the longest time..so we strolled in to the gorgeous restaurant which was surprisingly quite empty on a sunday night..it is sheer splendour. ..a mughal palace dining room ready to serve erstwhile nawabs..we felt like nobility ourselves!! There is gold leaf panelling on the ceiling and filigree work on the walls..a soft piano played in the background..it was so romantic..so ignoring the righthand column of the menu we ordered kakori kebabs rizala murg with two breads..shahi tukda and gulab jamun...the presentation and service was fivestar! The cutlery and bejeweled water glasses and silver platters are delighting..the kebab literally melted in my mouth..now dont hang me for this but i didnt appreciate the taste too much..it was nice..bt the spice was a bit too strong..i couldn't taste the meat amidst all the spices...the chutneys and the garlic pickle was very yummy..they served a flat sweetish bread with it.sheermal...loved it..then rizala murg which was a spicy white rich gravy and juicy pink chicken..chicken was soft and tender and still pink not rubbery and white..the gravy was lovely even on its own...here the spices were gentle and didn't overwhelm the meat..loved it..we ordered a warki paratha which was fresh 'khasta' warm sprinkled with fennel and baked to perfection..will go back simply for it..then a naan khummach which was a flaky layered paratha..it was nice too..the dishes were really rich and heavy..so sadly couldn't order biryani..they provide a green tea infused finger bowl..nice..shahi tukda had to be ordered being a personal favourite..it wasn't out of this world ,but tasty..then shahad e jaam which was a stuffed gulabjamun with pista and almond..it was a delicious gulab jamun..again nothing more...really heavy on the pocket obviously..but the experience was more than worth it...i'd love to revisit for the ambience and plain beauty of the place a lil bit more than for the food

The history of Awadh is painted with the glory of the nawabs that ruled it. Their clothes, their habits , their jewellery, architecture but most importantly their being connoisseur of food is what was that spread their fame to different parts of the world.Dum pukht or slow oven cooking methods in which meat and vegetables are cooked over a very low flame, generally in sealed containers. This style of cooking found it’s origin during the reign of Nawab Asaf-ud-Daulah in the mid 18th century.

Legends claims that when the famine struck, Nawab Asaf-ud-daulah, initiated a food-for-work programme, employing thousands in the construction of the Bada Imambara shrine. This programme went on for many years to come. Every day, cauldrons were filled with rice, meat, vegetables and spices and sealed to make a simple, one-dish meal that was available to workers day and night. Once when Nawab was doing the rounds he caught a whiff of the aromas emanating from the cauldron. Enchanted, the Nawab ordered the ‘dummed’ cuisine to be perfected for the royal table. Exotic dishes were evolved, in which flavours and fragrances intermingled, with exquisite results. Before long, the new cuisine was fashionable at many other royal courts like Hyderabad, Delhi, Kashmir, Rampur, and Bhopal. This was the start of DumPukht style of cooking.

The Quereshi family has kept this traditional cuisine alive in India for over 200 years and the recipes have been passed through generations within the family. MasterChef Shareef from the Quereshi family has brought this cuisine to the ITC Grand Maratha. I experienced the magic of his fingers very recently along with a group of bloggers.

ITC has a 5-course set meal concept known as the ‘NawabThal’, priced at INR 5000 per person, it is a grand culinary experience meant to be enjoyed at leisure. There are rituals and services involved that remind you of the bygone era of the nawabs and royal courts of Awadh. This ‘Nawab Thal’ is served with Chivas Regal, so a bliss for whisky drinkers.

As the first course, we were served Dum Pukht Kakori, which was a melt-in-your-mouth minced chicken kebab flavored with cloves and cinnamon, chargrilled and served with saffron. I have never tasted anything better in my life. Not only does it crumble softly in your mouth, it tastes of all the spices mentioned above without being overpowering. Just divine!

Jhinga Dum Nasha or prawns marinated and cooked in tandoor and finished in dum( can’t comment on this one as I am allergic to prawns).

With the second course came in the Shorba timater or Tomato soup. But to add to the culinary heritage it was served with namakparas (or salted crispies).

itc dumpukht 3

The mains or the third course had a variety of cuisines, amalgamated on my plate as is Awadh’s history. History states that Nawab was exiled during his reign and travelled to various parts of India and so the Awadhi cuisine adapted cultures.

Murgh Khushk Purdah is a boneless chicken, marinated and cured with star anise, grilled and dum cooked with an assortment of vegetables and served in a patty wrapped around it, like a ‘purdah’ or curtain. The faint aroma of star anise and spices, were very well balanced for my palate.

Mahi Sarson or Bhekti fillet marinated in mustard is the cultural influence that I was mentioning earlier. Surprisingly, it was also very mildly flavoured and the mustard did not overpower the taste of the fish.

I usually avoid trying lamb when I eat out as I believe and it comes from my experiences that the time a lamb requires to be marinated or the patience it needs to be cooked with is not a leisure a commercial set up has. But the Dum Pukht Koh-e-Awadh that I tasted in the Nawab Thal at ITC just defied all such notions. It was moist, soft and absolutely delectable. The pieces of the lamb are very carefully chosen by the chef himself to achieve the desired taste to this dish.

Maash Kaliya is a green moong lentil gravy dish with spinach tempered with green chillies and cumin. I am not a huge ‘dal’ fan, and with so much variety around, I could not do justice to this one.

These dishes were served with an assortment of naan or bread

Next came the Dum Pukht Biryani, was an exotically flavoured combination of basmati rice and delicately chosen lamb pieces, simmered with mace, ittar and kewra and finished on dum in a sealed handi. Again subtle flavours, extremely soft lamb pieces and totally divine.

The food is rich in texture and heavy. While tasting you may not feel it, but towards the fourth course you have to struggle to keep space for the desserts.

For the 5th course or desserts, we were served an assortment of shahi tukda( deep fried bread, dipped in sugar syrup and served with rabri, almonds and saffron toppings), Gulab ki Kheer (rice cooked in milk , sugar and rose petals with saffron and rose flavouring) and Kulfi Badshah Pasand(creamy pistachio Indian version of ice cream with gold leaf).

The finishing touch of Nawabi hosting was given by serving ‘paan’ in a floral motif decorative ‘paan daan’.

The names of the dishes that are the part of this Nawab Thal are as exotic as their taste. While their vegetarian selection is lovely too, if you’re a non-vegetarian this place is a must do. It’s excellent for formal office dinners, expat meets ( I am telling you they will go ga-ga over this exotic spread of Indian food). It’s slightly on the expensive side so keep it for a special occasion :).

Masterchef Shareef and ITC has obliged us by sharing two very exquisite recipes from this experience for our readers. While I am unsure if we can create the same magic as the chef himself but we shall surely try :). Click on the pictures below to get the recipes of DumPukht Badin Jaan and Dumpukht Galouti Kebabs.

DASTAN-E-DUM PUKHT : AWADHI CUISINE @ ITC MARATHA
I had an amazing experience to savour the flavors of Awadhi cuisine. I was invited to be a part of Awadhi food festival hosted by ITC Maratha in all splendor to celebrate the traditional cuisine of Lucknow – You feel like a royalty when you enter Dum Pukht. The décor recreates the era of Nawabs and kings of Mughal emperor that gives you a royal feel of warmth, richness and leisure to augment your dining experience. The ceremonial dining spread laden with the finest repertoire of exquisiteness to savour in a Mughal ambience. The interiors are reminiscent of a period stamped by rich conventions of craftsmanship. The sparkling gold patina of fish-scale reflected “chinikhanas” decorated the walls while glass “Shamadans” stand sentinel on the floor.

Cuisine from Awadh comes with a legacy of the Nawabs and the kings. With heavy influences from the Mughal cooking techniques such as Dum, Awadh cuisine bears striking resemblances to those of Persia, Kashmir, Punjab and Hyderabad. Its essence lies in its richness with liberal use of exotic spices. While Awadhi cuisine is predominantly known for its non-vegetarian delicacies, I wanted to explore the vegetarian delicacies of this region.

It’s a 5-course meal.We started with Kabab (veggie ones) the First one was Kham Khatai– Its delicate aromatic patties of green moong lentils, spiced with brown cardamom seeds, blades of mace and saffron. Another one Seekh Nilofari – Its mix of puffed lotus seeds and lotus stem, flavoured with fresh herbs and grilled on a skewer and sprinkled with aromatic kebab masala. I really liked this one not just for its flavor but for its preparation and it was very soft and delicious.

Shorba Timater– I never used to like tomato soup but this one just blew my mind. A delicious soup of tomatoes, cumin and fresh green coriander with crackling wheat crisps

Now it’s was time for Main course Qorma, Qaliya & Salan

Four different subz that will make you drool over it. Starting with Qasr-e pukhtan -which is made of Paneer cubes simmered in silky fresh tomato gravy, flavoured with royal cumin seeds and dried fenugreek leaves. Subz Miloni – A mélange of seasonal vegetables cooked in a smooth green puree of spinach flavoured with white cumin seeds and garam masala. Dum Pukht Badin Jaan – It looks like cupcake shape but I never used to eat brinjals at home let me tell you, friends, this one was literally awesome it’s slices of round brinjals marinated, shallow-fried and topped with tomato concase and garlic flavoured spiced yoghurt. The preparation is what makes every dish unique. The richness, color, texture is beyond the satisfaction. The last one was Mash Qaliya – Sounds filmy!! Isn’t it? Well its split gren moong lentils, slowly cooked with spinach and fresh ginger and green chillies.

I was almost done for the day when I got to know Biranj is still left. Guchhi Pulao just made my day.The smell of saffron seasoned basmati rice and flavor of morels stuffed with herbed cheese and finished in a sealed handi with cardamom.

Kuch Meetha ho Jaye! We come to the end before we leave let us have the sweet taste in mouth. Shahi tukda – An exotic dessert of sabbron rabri, spread on a sliceof syrup soaked homemadebread and garnished with silver leaf, pista and almond. What can you expect when you have three desserts in a row. Gulab ki Kheer– the name itself make it intrigued I definitely gonna have a taste. Basically it’s rice delicately cooked on low heat with milk and rose petals.

My Verdict – The combination of luxury and leisure makes it a unique experience to savour the Awadhi Cuisine. Don’t miss it if you are in Mumbai .

There’s an imaginative menu, top class ingredients and a kitchen that knows how to cook and present a dish in a modern style. But, it can also take those top class ingredients and present them with a bang on dishes.

Princely, awe inspiring, imposing is the aura of this awesome place

With a palace like magestic interiors dum pukht by ITC is a must visit

To match the superb ambience, the food served is also superly delicious. We had habiba chops which were one of the best lamb chops i have ever had & I have tried best of lucknowi places. So one can imagine !!!!

As the name suggests dum pukht biryani is their speciality. Flavour is very good and will completely satisfy your taste buds

Another must try is thr worki paratha. Very different from the normal breads and tastes superb with rich chicken gravy

Not giving 5 but 4.5 only because of the shahi tukda which was not up to the mark. It lacked the sweetness and richness that a shahi tukda must have

At the end , they served us Pan in a shahi andaaz kept in a big silver box.

Keept it up dum pukht . will visit this place again for sure

Dum Pukht: A Gastronomic Journey Through Persian Delights Nestled in the heart of Mumbai, Dum Pukht is a beacon of Persian culinary excellence that truly stands out. My recent visit to this restaurant was nothing short of extraordinary, combining an ambiance resonating with Persian cultural accents, a delectable array of dishes, and exceptional service. Culinary Extravaganza: The restaurant's pride lies in its meticulously crafted set meals, curated to offer a diverse journey through Persian cuisine. The starters, an opulent assortment of flavors and textures, were a perfect introduction to the richness that awaited. From aromatic saffron-infused kebabs to delicate mezze platters, each bite was a testament to the chef's mastery. The crown jewel of Dum Pukht is undoubtedly their marvelous biryani. The fragrant blend of spices, perfectly cooked basmati rice, and tender meat, all sealed in an earthen pot, exuded an aroma that alone could entice the senses. Each spoonful was a symphony of flavors, transporting me to the streets of Persia. Service Par Excellence: Among the myriad reasons that made this dining experience exceptional was the remarkable service, particularly from Naveen. His attentiveness, knowledge about the menu, and impeccable timing in serving made the evening even more delightful. Despite his remarkable service, Naveen humbly felt he hadn't done enough, showcasing his dedication and commitment to ensuring an impeccable dining experience for each guest. Conclusion: Dum Pukht isn't just a restaurant; it's a cultural journey through Persian culinary traditions. The amalgamation of exquisite food, serene ambiance, and outstanding service, especially from individuals like Naveen, makes it a must-visit for connoisseurs of fine dining and those seeking an authentic taste of Persian cuisine. I wholeheartedly appreciate Naveen's efforts and the entire team at Dum Pukht for an unforgettable dining experience that surpassed all expectations.

For me, personally, Dum Pukht is the greatest dining room in the world for Awadhi food specifically. The menu is classic, inspired from 200 year old recipes which were cooked in the royal kitchens of Awadh under the rulership of Nawabs. This has been extensively researched by the ITC Master Chefs when they were opening the original Dum Pukht at ITC Maurya and it’s clearly evident in the taste. The Dum Pukht here in mumbai is excellent since Imitiaz Qureshi Ji had shifted to this branch and all the favourites were and are to date faithfully rendered. Current head chef Asif Qureshi Ji is also an excellent chef giving out great dishes consistently. The melt in mouth Kakori Kebab is out of this world, something that has the potential to stay on your palette for years, beautifully seasoned and cooked to perfection it’s a perfect representation of a kebab. Biryani, I have no words. Truly fantastic. It definitely has that ‘Nazakat’ in truest sense. It’s mildly spiced, contains perfectly cooked pieces of prime cuts of lamb and is very fragrant. Culinary craft of the best possible level. The only area where Dum Pukht needs to work is on their curries if I had to critique. The dining room also needs a revamp I guess considering the interiors of other Dum Pukht branches. Rest, I think it’s perfection. Service is also amazing, shoutout to Priya for making my lunch worthwhile. But there’s some scope of improvement in attentiveness of the server, like if my glass of water is almost going to empty, the server should notice and fill it up & thing’s similar to this can be improvised. I took the single diner experience and it was money! Set menus are interesting since they allow unlimited portions in that. Ala Carte is tricky since the prices are overwhelmingly expensive for the portions provided, nothing wrong with the food just the portions can be at least incremented to justify the prices. If you just focus on the Kebabs & Biryani of Dum Pukht at Maratha, you are sure to achieve some sort of culinary enlightenment haha!

Dum Pukht is a renowned restaurant that specializes in traditional North Indian cuisine, particularly famous for its slow-cooked, flavorful dishes. The elegant ambiance and impeccable service contribute to a fine dining experience. While it's on the higher end in terms of cost, the authentic flavors and regal atmosphere make it a top choice for those seeking a royal Indian culinary experience.

Big fan of Dum Phukt at ITC Kohenur and was inspired to check this out. Went for the single diner menu which is two starters, one main, one dal, biriyani, bread of your choice, raita and dessert. There were a few dishes which were a lil off like the spices in the kakori and salt levels in the khorma/breads, but the sinfulness of their dessert and the awadhi style biriyani made up for it. Also the service staff and chefs taking a serious note of the feedback is well appreciated.
